What is Brazilian Rice?
Brazil is the home of flavourful cooking, and what's the best thing to pair with all those delicious churrascos and feijoadas?
Rice, of course!
But this side dish gets even better. Because Brazilians, in their wisdom, realized that EVERYTHING tastes better with garlic. So this classic Arroz Brasileiro rice dish is studded with chunks of minced garlic. Can't beat that.
Ingredient Notes
A few important notes on some of the ingredients used in this Brazilian Garlic Rice recipe:

Olive Oil: Any cooking oil will work with this recipe, but olive oil is especially nice. It toasts the rice while at the same time infusing it with a subtle nutty, fruity flavor.
Garlic: Obvs, garlic is the star ingredient here. Use a whole head of garlic (around 10–12 cloves) for every cup of rice.
Long Grain Rice: Basmati and jasmine rice are both long-grain varieties which can absorb lots of flavourful liquid without getting sticky or mushy. They are both superb choices for this Arroz Brasileiro recipe.
Chicken Stock and Salt: Chicken stock adds a layer of depth to the rice by providing much-needed umami, while also helping to cook the rice evenly. But even if you're using a full-sodium stock, you'll want to add a bit of extra salt to really balance out the dish.

Directions

Step 1: Rinse the rice a few times. Drain well in a colander, and set aside to dry.

Step 2: In a small stockpot, sauté garlic in olive oil until just starting to brown.

Step 3: Add rice and salt. Sauté until all the rice grains are coated in oil.

Step 4: Pour in chicken stock and bring to a simmer. Then turn the heat down to low and cook, covered, for 15 minutes.

Step 5: Remove from heat and let stand, covered, for another 10 minutes.

Step 6: Fluff and serve.
Storage Tips
Fridge: Refrigerate roasted garlic rice for three to five days.
Freezer: Freeze leftover rice for up to six months.
Reheating in the microwave: Cover with a microwave lid and heat on HIGH for about 1 minute per cup. For frozen rice, microwave on HIGH for 2 minutes per cup. Once heated, fluff the rice with a fork.
Reheating on the stove: Add to a saucepan and heat on the stovetop on medium-low heat for approximately 5 minutes.

- 1 cup basmati or jasmine rice
- ½ teaspoon salt
