Brazilian Garlic Rice (Arroz Brasileiro)
Rice, chicken stock, and sautéed garlic come together to make Arroz Brasileiro, a Brazilian staple. This simple side dish is tasty enough to eat on its own!

- 1 ½ tablespoons olive oil
- 10 to 12 cloves minced garlic approx. 1 head
- 1 cup basmati or jasmine rice
- ½ teaspoon salt
- 1 ½ cups chicken stock or water
Rinse 1 cup basmati or jasmine rice a few times. Drain well in a colander, and set aside to dry.
In a small stockpot, sauté 10 to 12 cloves minced garlic in 1 ½ tablespoons olive oil until just starting to brown.
Add rice and sauté until all grains are coated in oil.
Pour in 1 ½ cups chicken stock or water and ½ teaspoon salt and bring to a simmer. Then turn the heat down to low and cook, covered, for 15 minutes.
Remove from heat and let stand, covered, for another 10 minutes.
Fluff and serve.
