Instant Pot Garlic Mashed Potatoes (No Drain)

Once you try Instant Pot Garlic Mashed Potatoes, you’ll never make mashed potatoes any other way. No need to drain the water. Cook and mash right in the pot.

Ingredients

  • 2 pounds potatoes see Note 1
  • 1 head garlic 10-12 cloves
  • 1 cup chicken stock or water see Note 2
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup butter 1 stick
  • ½ cup half cream use milk for lighter taste, or heavy cream for richer

Instructions

  • Peel 2 pounds potatoes and 1 head garlic. (No need to peel.) Add them to an Instant Pot along with 1 cup chicken stock or water and 1 teaspoon salt.
  • Put on the lid and make sure the steam release valve is in the sealing position.
  • Pressure cook for 10 minutes, then natural release for 5 minutes before releasing the remaining pressure.
  • No need to drain. Add ½ cup butter directly to the Instant Pot and mash it into the potatoes and garlic.
  • Pour in ½ cup half cream and continue to mash it all together until it reaches your preferred consistency.
  • Mix in ½ teaspoon black pepper and fresh herbs (we like scallions or chives) if you’d like, and serve.

Notes

  1. Potatoes: If your potatoes or small or medium-sized, there is no need to chop them. If they are larger (more than 6 ounces), then cut them in half.
  2. Chicken Stock: Use chicken stock instead of water to cook your potatoes to give them a flavour boost. Throw in a tablespoon of concentrated bouillon (such as Better Than Bouillon Paste or Lee Kum Kee Bouillon Powder) for an extra dose of salty savoury goodness. It seriously takes your mashed potatoes to a next level.
