15-Minute Better than Bouillon Ramen

This comforting Better Than Bouillon ramen is quick and customizable. Our nearly-instant ramen soup recipe is a healthier, homemade take on instant noodles.

Ingredients

  • 1 tablespoon oil we use the garlic infused oil from making garlic confit
  • 3 cloves minced garlic
  • 3 cups water 2 cups if using fresh noodles
  • 2 tablespoons Better than Bouillon
  • 1 tablespoon miso paste
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 to 3 ounces dried noodles 1 brick
  • 1 cup leafy greens *optional; baby bok choy, spinach, chopped napa cabbage all do well here
  • 4 ounces cooked protein of your choice *optional; such as chicken chunks, cubed steak, or tofu

Instructions

  • Heat 1 tablespoon oil in a small stockpot on medium heat. Gently sauté 3 cloves minced garlic until they just start to brown.
  • Pour in 3 cups water. Mix in 2 tablespoons Better than Bouillon, 1 tablespoon miso paste, ½ teaspoon garlic powder, and ¼ teaspoon onion powder. Cover and turn the heat up to high.
  • When the water comes to a boil, add the 2 to 3 ounces dried noodles, 1 cup leafy greens, and 4 ounces cooked protein of your choice (optional). Turn the heat down to a simmer. Cook for one minute less than the recommended time indicated on the noodles package. The noodles will continue cooking in the hot soup even after you take it off the heat.
  • Serve with optional toppings.

Notes

  1. Noodles: You can also use packaged instant ramen for this recipe. Just take the noodles and save the seasoning packet for another use. (Hint: add it to our Lap Cheong Fried Rice or Garlic Shrimp Fried Rice for an umami bomb.)
