A Quicker Way to Velvet Chicken Breast

A science-based Quicker Velveting Method using baking soda and cornstarch.

This easy 15-minute marinade, used by Chinese restaurants, will transform your chicken breast. Makes stir-fried chicken silky and tender every time!

INGREDIENTS:

Chicken breast

Shaoxing wine

Oyster sauce

Garlic powder

Cornstarch

Whisk together all the velvet marinade ingredients together until smooth.

Slice the chicken into strips, anywhere from ¼-inch to ¾-inch thick.

Add chicken to the marinade mixture and mix well to coat all the pieces.

Let marinate for at least 15 minutes before using.

Tip: Don’t add too much baking soda, or marinate for more than 6 hours. Or else the chicken will start to get mushy.
